Gluten Free Blueberry Waffles
Ingredients

1 ½ cup Judee’s Pancake Dry Mix
- Zest of ½ lemon
- ¼ tsp Vietnamese cinnamon (can substitute regular cinnamon)
- 1/3 cup whole milk
- 2 large eggs
- ¼ cup olive oil (or neutral oil)
- ½ tsp almond extract
- 1 tsp vanilla extract
- ½-1 cup fresh blueberries
Directions
Mix 1 ½ cups (8oz) of Judee’s Pancake Mix with cinnamon and lemon zest.
- Create a small well in the middle of the Dry mix, Add in the eggs, milk and oil
- Whisk until just combined and gently fold in blueberries.
- Heat a skillet or pan over medium low heat Once warm, lightly grease with cooking spray or oil of choice
- Preheat waffle maker and pour approx. 1/3 of the prepared batter in a greased waffle maker. Follow your waffle manufacturer’s instructions for preparing waffles.
- Remove from the waffle maker and serve with your favorite toppings !
