For breading: Mix 1 cup of Judee’s Unmodified Potato Starch with 1/4 cup of water or another liquid to create a batter. Coat the food and fry until golden brown. For thickening: Use 1 tablespoon of potato starch mixed with 2 tablespoons of cold water per cup of liquid to be thickened. Stir into the hot, simmering liquid and cook until thickened, stirring frequently to avoid lumps.
