For thickening sauces: Use 1 Tbsp Corn Starch per cup of gravy or dairy based sauce. First mix 1 Tbsp Corn Starch and 1 Tbsp water into a paste, then add it to the sauce. It will thicken very quickly as high temperatures and you'll need to stir constantly. This can substitute potato starch and tapioca starch. For pies, cake filling, and custard pudding, use as needed without a specific ratio or technique mentioned.
