Place the block of tofu on folded up paper towels. Then put more paper towels on top & something heavy to drain the water. Leave for ~20 min or longer if possible (switch out the paper towels too).
Then cut into cubes & place in a large bowl with the cornstarch, smokehouse rub, & ~1-2 tbsp of olive oil. Key to making them super crispy is the cornstarch!!
Make sure each piece of tofu is evenly coated then place on parchment paper on a baking sheet. Bake at 425 for around 35-40 min (move them around half way through).
While they’re baking, slice the onion and caramelize in a pan with lots of olive oil. In a separate pan, sautéed the broccoli in olive oil.
Once they start to char on the outside, squeeze in some lemon juice. (Optional: add some parmesan cheese)
Once the tofu is done, let cool, coat in bbq sauce, and serve with the veggies.
