Directions

1. Heat 1 tbsp vegetable oil of choice in a large pan on medium heat

2. Dice potatoes (finely), onions, red pepper, and green pepper

3. Place potatoes in the pan and let them cook for 5-1 minutes, stirring frequently

4. Add in the rest of the vegetables and as they cook, mix in the seasonings

5. Cook eggs as desired (we recommend over easy) and place on top when the rest of the food is fully cooked

6. Cook to desired texture and enjoy!

Optional: add parsley, cilantro, and other herbs to garnish
