Combine dry ingredients with water (about 1/2 cup water... or enough to form dough-like texture, it should stick together and be able to roll out). If the dough is sticking when rolling out- add more cassava flour and if it's too crumbly- add more water. You can also add a bit of cassava flour to the bottom of the parchment paper, so they don't stick if you like.
Use a tortilla press lined with parchment paper on both sides and press out tortillas (or you can do it by hand and roll them out with a rolling pin).
Heat a skillet over medium heat and cook tortillas until golden on each side. Serve or store in an airtight container in the fridge.
