Preheat oven to 325F. In a mixing bowl, add eggs and sugar and beat for 3-5 mins until light and fluffy. Add coconut flour, almond flour, cocoa powder, coffee, and vanilla and mix until we’ll combined.
In another microwave safe bowl, add chocolate chips and coconut oil and heat in 30-sec increments until melted (not burned!). Mix well and add to brownie batter.
Combine brownie batter and pour into a greased 9x9 baking tray.
Bake for 35-40 ministers until a toothpick comes out clean.
While it is resting, make ganache by setting up double-boiler. Add chocolate chips to bowl and melt. Once melted, add heavy cream and whisk until combined and gooey.
Pour ganache over brownies and top with rainbow sprinkles. Let ganache firm up before slicing and enjoying.
