Gluten-Free Pretzel Bites (No Yeast!) with Cheese Dip by Figgin Delicious

Make Gluten-Free Pretzel Bites and Cheese Dip with this recipe by Figgin Delicious! Great as a party snack and appetizer.

Ingredients

  • 2 cups Judee's All Purpose Gluten Free Bread Mix

  • 1 1/2 cups of Greek yogurt

  • 1 tbsp baking powder

  • 1 tsp salt

  • Egg wash - 1 egg whisked together with 1 tbsp water

  • 1 tbsp butter (optional)

  • 2 tbsp baking soda

  • 1 1/2 tbsp Judee's All Purpose Gluten Free Bread Mix

  • 2 tbsp Judee's Gouda Cheese Powder (optional)

  • 2 cups sharp cheddar cheese, shredded

  • 3 tbsp butter

  • 1/2 cup beer (or 1/3 –1/2 cup additional milk)

  • 1 tbsp spicy brown mustard

  • 1 tsp Worcestershire sauce 

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

Directions

  1. Preheat oven to 425 degrees F

  2. Whisk together flour, baking powder and salt. Add in Greek yogurt and combine until dough-like

  3. Sprinkle flour on a cutting board, take about 1/4 of the dough, and roll into a long rope about 1 1/2″ thick. Cut into 1-1 1/2 inch pieces. Repeat with the remainder of the dough. Should make ~48 pretzel bites!

  4. Bring water and baking soda to a boil, drop in 8-10 pieces at a time for 10 seconds, then scoop out with a slotted spoon.

  5. Spread out evenly on non-stick baking sheet. Brush with egg wash and sprinkle with sea salt or pretzel salt. Bake for 12-15 minutes.

  6. While baking, make the cheese sauce. In a sauce pan, melt butter in a saucepan over medium low heat. Add in the flour until well combined. Next, add in the milk, cheese, mustard, Worcestershire sauce, garlic powder and onion powder. Mix until cheese is fully melted.

  1. Brush the pretzel bites with melted butter and broil for 1-4 minutes, watching closely so they don’t burn. Top with more sea salt or pretzel salt
