Make these fluffy vegan and gluten free baked apple cider donuts by Chelsea Peachtree using our apple cider vinegar powder, apple pie spice, organic chia seeds, and cinnamon sugar.
Ingredients

1 1/2 tsp Judee’s Apple Pie Spice

1 chia egg (1 tbsp Judee's Organic Chia Seeds + 2 1/2 tbsp of water)

1/2 cup vegan buttermilk (combine 1/2 cup almond milk + 1/2 tbsp of apple cider vinegar*)

1 1/2 cup apple cider reduced to to 1/3 cup

1 3/4 cup gluten free flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

3 tbsp coconut oil, melted

1 tsp vanilla

1/2 cup granulated sugar
-
2 tbsp brown sugar
-
3/4 cup Judee's Cinnamon Sugar

2 tbsp Judee's Apple Pie Spice
Ingredients for Sugar Cinnamon Topping:
Directions
Begin by placing the apple cider in a sauce pan and bring it to a gentle boil. Simmer the apple cider until it reduces to 1/3 cup. This can take up to 25-30 minutes.
Preheat the oven to 350 degrees F. Grease the donut tray.
Once the cider is almost done reducing, make the chia egg by combining 1 tbsp of Judee's From Scratch chia seeds + 2 1/2 tbsp of water. Mix and let sit for 10 minutes. Once it becomes jelly-like in texture, add the sugars, vanilla extract, coconut oil, apple cider reduction and buttermilk. Mix until combined. It will be loose and gritty.
Slowly add in the gluten free flour, baking soda, baking powder, Judee's From Scratch apple pie spice and salt. Mix until a cake-like batter forms.
Scoop the batter into the donut tray cavities, filling them up to the top of the cavity. Continue with the rest of the batter.
Bake on the middle tray in the oven for 10-12 minutes, or until you can insert a toothpick and remove it cleanly.
Allow to cool for 5 minutes.
While the donuts are cooling, place all of the ingredients for the sugar cinnamon topping. In a large shallow bowl or plate with raised edges, mix all of the ingredients together. Then, insert each donut, one by one, into the mixture and gently toss it into the mixture to cover it with the cinnamon sugar blend.
Store in an airtight container for up to 3 days.
Recipe Note
*Use Judee's Apple Cider Vinegar Powder and activate by combining 3/4 powder with 1/4 tbsp of water. Use 1/2 tbsp of the mixture for this recipe.
