Strawberry White Chocolate Chip Muffins by Celiac Sweetie

Make these delicious gluten free strawberry white chocolate chip muffins complete with orange glaze and bakery style sugar by Celiac Sweetie.
Ingredients

1/2 C Judee’s Strawberry Sugar

1 tsp Judee’s vanilla powder

2 tsp of Judee’s arrowroot powder

1 1/2 C GF all purpose flour

1/2 tsp baking powder

1/2 tsp salt

1/4 C greek yogurt
-
1/4 C pure maple syrup
-
1/2 C oil
-
1 egg
-
1 C of diced strawberries
-
1/4 C mini white chocolate chips

2 T Judee’s Orange Juice Powder
-
1/2 C powdered sugar
-
3 T water
Glaze:
Directions
Mix together: 1 1/2 C GF all purpose flour, 1/2 C Judee’s strawberry sugar (can sub regular sugar, just won’t have as strong of a strawberry flavor), 1/2 tsp baking powder, 1 tsp Judee’s vanilla powder, and 1/2 tsp salt
Mix 1/4 C greek yogurt with water to form a creamy liquid, add to dry mixture along with 1/4 C pure maple syrup, 1/2 C oil (I tested with both olive oil and avocado oil), and 1 egg; beat until well combined
Take 1 C of diced strawberries and add 2 tsp of Judee’s arrowroot powder (or sub 2 tsp GF flour) and gently mix until the strawberries are lightly coated
Add strawberries & 1/4 C mini white chocolate chips to batter and stir until just combined
Scoop batter into a lined muffin tin, bake at 350 for 25-28 minutes
To make the glaze- mix together 1/2 C powdered sugar, 3 T water, and 2 T Judee’s orange juice powder
Once muffins are cool, dip into glaze and then once the glaze starts to get tacky, dip the tops in turbinado sugar
