Make these delicious Gluten-Free Lemon Blueberry Baked Pancake Bars by Kaylie's Healthy Recipes using our GF All Purpose Bread Flour Mix & Powdered Sugar!
1 ½ cup Judee's All Purpose Gluten Free Bread Flour Mix
½ cup dairy free creamer or milk
¼ cup lemon juice
1 ½ tsp baking powder
¼ tsp salt
1 1/2 cup blueberries
1/2 cup Judee's 6x powdered sugar (or more if needed)
1 tbsp lemon juice (or more if needed)
For the bars:
For the Topping:
Combine all ingredients for the pancakes (except blueberries and baking powder), then combine until there are still some chunks of flour, add blueberries and baking powder, then stir until just combined.
Line a 8” baking dish with parchment paper. Pour batter into the pan and bake on 350F for 20 minutes.
Once cooked, remove from the oven. Stir together powdered sugar and lemon juice and spread it on top.
Slice and serve!
