Ingredients

1/4 cup Judee's Whole Egg Powder

1/2 cup water

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup diced onion

1/4 cup diced bell pepper

1/4 cup diced mushroom
-
1/4 cup diced cooked bacon

1/4 cup grated cheese
Directions
In a medium bowl, whisk together the egg powder, water, salt, and pepper until well combined.
Heat a skillet over medium heat and add the diced onion, bell pepper, and mushroom. Cook for about 5 minutes, or until softened.
Add the diced bacon to the skillet and cook for an additional 2 minutes.
Pour the egg mixture into the skillet with the vegetables and bacon. Cook for about 5 minutes, or until the bottom is set.
Sprinkle grated cheese on top of the frittata, if using.
Turn the heat to low, cover the skillet with a lid, and cook for about 5 minutes, or until the cheese is melted and the top of the frittata is set.
Cut the frittata into wedges and serve hot.
