Make this delicious Pumpkin Pie like a pro using our coconut flour. Scrumptious dessert during the fall season!
3 tbsp Judee’s Coconut Flour
1.5 cup almond flour
1/4 tsp baking powder
4 tbsp melted butter
1 large egg, beaten
1 can pumpkin puree
1 cup heavy cream
1/2 cup brown sugar
3 large eggs, beaten
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1 tsp vanilla extract
1/4 tsp salt
Preheat oven to 350 degrees F
Combine all the dry ingredients. Add in melted butter and egg in parts and mix until dough forms.
Press dough into a pie plate and use a fork to poke holes in the dough
Bake for 10 minutes or until lightly browned
Mix all the ingredients for the filling together until well combined and smooth
Pour the filling into the baked crust and bake for 35-40 mins or until the mixture is cooked
Use a toothpick to check if the filling is ready; if it sticks to the toothpick bake until toothpick comes out clean
Turn off the oven and let the pie cool until ready to serve. Cover and refrigerate leftovers.
