Create these bite size Pumpkin Protein Muffins using our All Purpose Gluten Free Bread Flour Mix, Pea Protein Powder and Vanilla Powder!
Ingredients

1/4 cup Judee’s All Purpose Gluten Free Bread Flour Mix

2 tbsp Judee’s Pea Protein Powder

1 tsp Judee’s Vanilla Powder

1 large egg
-
2 tbsp coconut flour
-
1 tsp ground cinnamon
-
1/2 tsp ground nutmeg
-
1/2 tsp ground ginger
-
1/2 tsp baking soda
-
1/2 tsp sea salt
Directions
Preheat oven to 350 degrees F
Mash banana, pumpkin puree, almond butter, maple syrup, and egg together in a bowl until combined
Then add dry ingredients and combine until batter is smooth
Grease and fill a mini muffin pan with batter and bake on 350F for about 10 minutes or until a knife when inserted comes out clean- depending on the calibration of your oven, it will take more or less time.
Serve with vanilla greek yogurt (or dairy free yogurt) on top for extra tastiness!
