Quinoa Flour Banana Pancakes

1 cup Judee's Quinoa Flour
1 tsp baking powder
1/4 teaspoon baking soda
3/4 cup nonfat plain greek yogurt (or reconstituted yogurt powder)
1 large ripe banana, mashed
1 tbsp honey or equivalent honey powder
1 tsp pure vanilla extract or ½ tsp vanilla powder
1 egg, slightly beaten
1/4 cup unsweetened milk of choice, plus more if mixture is too thick
Blueberries or chocolate chips
In a large bowl, whisk together quinoa flour, baking powder, and baking soda; set aside.
Add wet ingredients and optional fruit to the flour mixture and mix together.
Drop batter by 1/4 cup onto medium heat skillet.
Flip cakes and cook until golden brown on underside, 2 minutes.
