Ingredients

1/2 cup Judee’s Brown Rice Protein Powder

1/2 cup oat flour

1/2 cup sprouted oats
-
1/2 cup raw honey
-
1/2 tsp vanilla extract

1/2 tsp sea salt
-
2 tbsp Judee’s Oat Milk Powder

2 tbsp cup powdered monk fruit

1 tbsp cashew milk
-
24 googly eyes
-
Chocolate chips
-
1/2 cup shredded coconut
-
1/3 cup powdered monk fruit
White Chocolate:
For the Ghosts:
Directions
Add cashew butter, oat flour, sprouted oats, protein powder, honey, vanilla and sea salt to a mixing bowl. Mix together until you form a dough with your hands. Add in more protein powder if the dough seems too wet.
From the ball of dough form about 12 energy bites with your hands. You’ll want to make them into little ghost shapes *as pictured*. Line up the ghosts on a sheet of parchment paper. Freeze for 30 minutes.
While you are chilling the energy bites, make the white chocolate. Melt together cocoa butter, Judee’s oat milk powder, monk fruit and cashew milk. Let mixture melt and then bring to room temp.
Take the energy bites out of the freezer. One by one you’ll coat them in a bowl of melted white chocolate and then cover with shredded coconut and monk fruit mixture.
Before the white chocolate hardens, add on to each ghost, two eyes and a chocolate chip for a mouth.
Let freeze for another 30 minutes and enjoy!
