Apple Pie Spiced Halloween Meringues
30 Cookies (3 per serving)
Make these fluffy, fall-inspired meringue cookies using our Apple Pie Spice Seasoning!
1 cup Judee’s Complete Meringue Powder
½ Tbsp Judee’s Apple Pie Spice
½ cup cold water
Melted white chocolate
Stand Mixer with whisk attachment
Preheat oven to 250°F . Mix 1 cup Judee’s Complete Meringue Powder, ½ Tbsp Judee’s Apple Pie Spice Mix and ½ cup cold water to stand mixer. Using a whisk attachment, whip on high for 9-12 minutes gradually increasing speed, or until stiff peaks are formed.
(optional) Divide batter in half and set half aside. Add food coloring (orange or green) to one half and gently fold in until color is mixed throughout.
Add meringue mix to a piping bag with large star tip. If meringue mix is colored, you can layer the meringue mix to obtain a marbled design. Pipe out 25-30 cookies onto a tray lined with parchment paper or nonstick mat.
Bake at 250°F for 40-45 minutes or until done. See tip below to check when cookies are done. Once the cookies are done turn off the oven and let cool for 1 hour in closed oven. Do not open the oven door.
Melt white chocolate and add food coloring if desired. Using a spoon or a fine tip in a piping bag, drizzle the cooled cookies with the melted chocolate. Add your favorite color of Judee’s Sprinkles and allow chocolate to cool. Serve and Enjoy!
To check for doneness, carefully open the oven door and remove a cookie using a metal spatula. Allow to cool slightly and break it open. If the cookie is still wet inside, continue to cook for 5-minute intervals, checking after each interval.
